Sunday brunch – Gluten free feta, summer fruit & pistachio pancakes

Are you looking for something delicious and nutritious to whip up for brunch tomorrow? Why not make up a batch of these?

Last week with the in-laws here I decided to make something a little special for our breakfast/ brunch. I’d made up this recipe before for friends and so knew it was a good mix of flavours.

Originally it was a Jamie Oliver recipe from his iPhone application but I modified it to make it gluten free and a little more sweet than savoury. I’d normally whip up a pancake batter using Schar gluten free flour. But a friend of mine had returned with a gift in the way of gluten free pancake mix from Bobs Red Mill and I needed to try it out.

Overall I was happy with the Bobs Red Mill version of this pancake. It’s a little sweeter than I’d have normally created but everyone was very happy with the finished result. The silence at the table whilst they were eaten spoke volumes!

If you’re hoping to create a normal version of this recipe, take your favourite pancake batter, add feta and top as shown.

The recipe for the breakfast I created is below:

  • 1 1/2 cups of Bobs Red Mill Pancake Mix
  • 1 egg
  • 1 cup of milk
  • 1 tablespoon of sunflower oil
  • 150 grams of finely chopped feta cheese
  • 1 punnet of strawberries washed and hulled
  • 1 punnet of blueberries washed
  • 1 punnet of raspberries washed
  • 3 apricots washed, hulled and cut into slices
  • 2 tablespoons of chopped pistachio nuts
  • A small tub of natural or vanilla flavoured yoghurt
  • Your favourite wild honey to drizzle

Lightly mix together berries and cut up apricots in a bowl ready to serve.

Whisk together pancake mix, egg, milk and sunflower oil until well combined. Add crumbled feta and stir lightly.

Heat frypan over medium/ high heat and lightly butter/ oil. Ladle batter into pan, brown on both sides and place in oven set at 100 degrees to keep warm until you finish cooking up all the pancake batter. If you’ve room, warming your plates is also a nice touch (provided their oven proof).

Plate up pancakes, spoon mixed fruit over the top, place a spoon of yoghurt on the top of each and sprinkle with pistachios. Drizzle lightly with honey.

Serves 3 to 4 adults
